Joanna’s Grandma’s Jamaican Patty Recipe

Joanna and Rhys make Jamaican Patties using a special recipe from Joanna's Grandma. Grown-ups follow the instructions below and let your little ones help out with the nice easy parts. These patties need to be cooked in a preheated oven at 180 degrees and for 25 minutes. Make sure the patties are cool enough to eat when tucking in!

How to make the pastry

Pastry Ingredients

  • 500g Plain flour

  • 250g Unsalted butter

  • 1 tablespoon turmeric

Pastry Method

  • Put flour and turmeric into a large bowl

  • Rub butter into flour using your finger tips until it resembles breadcrumbs

  • Add a tablespoon of water, use a spoon to bring the dough together.

  • Handle gently

  • Wrap in cling film and chill in the fridge

Filling Ingredients

  • 500g ground beef mince

  • Large onion chopped finely

  • 3 cloves garlic chopped or mince

  • 4 stalks spring onion chopped finely

  • 8 sprigs fresh thyme (Or can use dried)

  • 1 hot pepper (If you like it spicy) Joanna's Grandma likes to use a scotch bonnet!

  • 2 beef stock cubes in 60ml water

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 3 tablespoons curry powder

  • 1 teaspoon ground allspice

  • 2 teaspoons onion powder

  • 2 teaspoons garlic powder

  • 2 teaspoons dry thyme and

  • 2 teaspoons smoked paprika

  • ½ teaspoon black pepper

Filling Method

Hobs are hot so the filling needs to be made by a grown-up.

  • Heat 1 tablespoon of oil in a pan over medium to high heat and add the onion, spring onion, garlic, fresh or dried thyme and pepper if using. Add the beef and spices.

  • Brown the meat, keep breaking up the meat so no big clumps form.

  • When browned pour in breadcrumbs and stock then mix it all up.

  • Let the pan cool to be able to touch.

Now it's the fun bit! A bit more grown-up help is needed, but have fun with rolling out pastry and cutting out pastry circles together.

  • Pop a bit of parchment paper on an oven tray.

  • Dust a clean surface with some flour and roll out the pastry.

  • Use a table knife or a blunt utensil to cut round a small bowl.

  • Pop two tablespoons of the cooled filling mixture in each round circle.

  • Fold the circle and seal with your fork like Joanna and Rhys do!

  • Ovens are hot so grown-ups preheat the oven to 180 degrees and cook for 25 minutes.

Make sure the patties are cool enough to eat when tucking in!
